If there was only one band I could listen to for the rest of my life, The Kinks would be on the top of that list. Yes, the Beatles and Zeppelin would be on that list too, but for some reason Ray Davies and the gang always squirm into my heart.
But enough about the British Invasion. More about cupcakes.
These treats were, of course, inspired by Lola. The cake is Cherry-Cola - which, apparently, isn't sold in Canada. I couldn't find a bottle of this stuff anywhere. Instead, I boiled down classic cola with maraschino cherry syrup. The top is a Pink Champagne buttercream, with a cream cheese base.
I've done a couple cola cakes - none of them really tickle my fancy. This cake was thick and really moist. I'm a fan of moist cake (that's why I usually put yogurt in my batter), but a cake has got to have a little flake to it. Despite my best efforts, I can never manipulate a cola cake recipe to be as flakey as I would like. But, for these cupcakes, the cake works well with the thick icing.
I must mention the reason why these little pink beauties came into fruition. These are my first entry into IronCupcake: Earth. The theme this month was, of course, music - and what better way to meet the theme than with The Kinks?
