Ingredients

Number of serving: 2
2 nos Brinjals (big&cubed)

2 teaspoons Sambar powder

1 teaspoon Tamarind extract

1/4 teaspoon Turmeric powder

2 tablespoons Oil

1/2 teaspoon Mustard seeds

1/2 teaspoon Urad dal

Few curry leaves


To Grind:

1/4 cup Grated coconut

1 teaspoon Jeera

5 nos Shallots

Preparation

  • Grind all the ingredients given under the list 'to grind' with enough water as bit coarse paste.
  • heat the oil in a pan,let splutters the mustard seeds, urad dal, add immediately the cubed brinjal pieces.
  • Sauté for few minutes, add the grounded paste, sambar powder,tamarind extract, turmeric powder and salt.
  • Mix well and cook in simmer for few minutes, stir in between until the veggies get well cooked.
