- Cook chicken in boiling water for 20 - 25 min.
Pour oil in a hot pan, add chili powder and flour and stir. - Put tomato sauce, water, cumin, garlic powder, pepper, salt and sugar in a bowl and mix.
- Pour this mix in the pan and cook to thicken the sauce.
- Take a tortilla and fill it with grated mozzarella and pulled chicken.
- Roll the tortillas and put them in a dish.
- Pour the sauce on top an spread it all over the tortillas. Sprinkle some mozzarella and bake 20 min at 350°F ( 180°C).
- Remove from oven and decore with avocado slices, chopped cilantro and feta cheese or cotija.
- Your enchiladas are ready for dinner ! :D
