Chinese noodles wok (vegetables and textured soy proteins)

Preparation
- Prepare the marinade: Start by rehydrating the textured soy proteins by placing them in a bowl with hot water and covering everything with a plate. Reserve for 10 minutes then drain.
Place the rehydrated and drained soy protein in a new bowl with the rest of the marinade ingredients. Mix well and leave to rest for 30 minutes (or the night before). - Prepare the other ingredients: clean the Chinese cabbage and slice it. Do the same with the mushrooms.
In a pan, heat the olive oil then add the marinated soy proteins and the mushrooms. Cook over medium heat for 10 minutes while stirring occasionally.
- Add the chopped Chinese cabbage, mix and cook for 5 more minutes. The Chinese cabbage should be still crunchy.
- Cook the noodles in a pot of water according to the directions on the package.
Once cooked and drained, add them to the pan with the garnish.
- Mix everything well then serve immediately.
- Before tasting, do not hesitate to sprinkle your plate with chopped chives and sesame seeds. Enjoy your food !

What is textured soy protein?
Soy proteins are made from de-oiled soy flour. It is a food very rich in vegetable proteins and can be stored for a long time thanks to its dehydrated form. In fact, once they are rehydrated, they look like shredded pieces of chicken. Without any particular taste, they take on the flavors of the foods with which they are cooked. Don’t hesitate to have fun with the multitude of spices and herbs that come your way!
Can I replace textured soy proteins?
If you don't want this recipe to be vegetarian, you can replace the soy protein with shredded chicken.
