How about adding a little Japanese flavor to your omelette? That's the promise of Okonomiyaki! It's a Japanese dish, particularly from Osaka, although you can also eat it in Tokyo. Like any traditional dish, it's cooked differently in different regions. In northern Japan, for example, okonomiyaki contains noodles. Combine the flour and baking powder, then add the stock and mix well. Chill for about 30 minutes (while you prepare the other ingredients).
Chop the Thai chives and cut the Chinese cabbage and shrimp into small pieces.
Stir the chives and shrimp into the flour+baking powder+stock mixture. Stir in the Chinese cabbage. Add the eggs to the mixture and stir.
Oil a frying pan with a paper towel. Place several slices of bacon side by side. Add about 1 ladle of batter (depending on the pan).
Cook the batter for 3 minutes over low heat, then flip and cook for another 3 minutes. Then flip again and cook for 3 minutes over medium heat to crisp the bacon a little more.
Remove from heat and pour okonomiyaki sauce over the top. Spread the sauce with a brush. Drizzle with mayonnaise. Sprinkle with Thai chives and katsuobushi.
