Japanese fluffy pancakes
Everyone knows regular pancakes. There are also American pancakes (a bit larger). But Japanese pancakes take the prize for the largest and fluffiest pancakes :D One pancake can serve up to two people! Ready?

In a bowl, mix the warm milk, egg yolks, and melted butter.
Combine the flour and baking powder, then add them to the previous mixture.
Whisk the egg whites until stiff peaks form and gently fold them into the batter.
Fill the pan almost to the top and cover. Cook for 20 minutes on low heat. Insert a toothpick; if it comes out clean, it's done.
Serve with a bit of butter and maple syrup (or agave syrup, honey, jam, chocolate...)
Observations
* You can serve it with fruits, chocolate, honey, caramel... Or with savory ingredients like ham, cheese, crispy bacon, egg...
* As we always say, you can customize the flavor to your liking by adding lemon zest, orange zest, orange blossom water, coffee...
