Chinese scallion pancakes

Mix flour, sesame oil and salt. Add the boiling watergradually while mixing. Add water if needed. Form a ball, cover and leave to rest for 30 minutes at room temperature.
Separate the ball into 8 equal pieces. Roll out the dough pieces (don't forget to flour the work surface). Brush sesame oil over the surface.
Add chopped green onion on the surface then roll everything to form a sausage. Roll up the sausage on itself.
Roll it out as thinly and delicately as possible.
Heat a little oil in a frying pan over medium heat then cook the pancakes for 2 minutes. Flip and cook for 2 more minutes.
There you are, your scallion pancakes are ready !
