Preparation
- Peel and cut the onion into thin slices using the mandolin (if you don't have one you can cut thin strips with a knife).
- Pour olive oil into the pan and add the onion slices, then cook for about 10 minutes over medium heat, stirring occasionally (the onions should be translucent).
- Meanwhile, beat the eggs in a bowl. Add the grated parmesan, a pinch of salt, a pinch of pepper and mix everything well.
- When the onions are cooked, spread them evenly across the bottom of the pan. Then add the beaten egg mixture, making sure it is evenly distributed (hold the pan by the handle and rotate it to spread the mixture). Cook the frittata for about 7 minutes over medium/low heat with the lid on.
- Check if the edges come off easily and if the bottom is well cooked. Then turn the onion frittata using a plate (or flat lid).
- Continue cooking on the other side for about 4/5 minutes over medium heat, without a lid.
- And there you are, the onion frittata is ready. You can serve it hot, warm or cold, it’s up to you!
