Snowball cake, (vegan chocolate applesauce cake)

Ingredients

Dry Ingredients:

• 2 cups un-bleached all purpose flour
• 1/3 cup cocoa powder
• 1 cup sugar
• 1 tablespoon corn starch
• 2 teaspoons baking soda
• 1/2 teaspoon coarse salt

Wet Ingredients:

• 2 cups applesauce
• 1/4 cup canola oil
• 2 teaspoons vanilla extract
• 1/2 teaspoon instant espresso powder
• 1 cup chocolate chips
• Coconut Glaze- The approximation
• coconut milk (1 cup)
• 1/2 cup coconut flakes
• 2 cups powdered sugar
• 1 teaspoon vanilla extract
• a few drops of coconut extract (optional)
• pinch of salt
