Preparation
- Grate the zucchini and press it through a colander (or a clean tea towel) to remove as much water as possible.
- Place the grated, drained zucchini in a bowl and add the salt, pepper, egg, flour and crumbled feta.
- Mix well to obtain a homogeneous batter.
- Shape your fritters with a tablespoon and place on oiled parchment paper in the Air Fryer tray. Bake at 370°F (190°C) for 20 minutes in "Air Fry" mode, turning halfway through.
- Meanwhile, prepare the sauce by mixing the Greek yogurt, feta, mint, lemon, salt and pepper.
- And now the zucchini fritters are ready!
