Please let NORMAL blogging resume!!!! Russell and I got our internet/cable hooked up on Friday, but of course it couldn’t just be that easy. Our internet has not worked since the dude ”hooked” it up on Friday. Yesterday my blogging took place at Atlanta Bread while Russell and I enjoyed brunch. Of course there waffle and coffee are delicious. And getting to hang out with my buddy and fellow blogger friend Tyler is fun too! P.S. This is Tyler showing off his pet-sitting wounds from taking care of Kim’s evil sweet kitty. Russell FINALLY got the internet up and working tonight. YAYAYAY!! We also have like 1000 channels now on our tv. Sersiously…..1000 channels?!?! But my oh-so-lovely husband found [and wrote down] the 5 channels out of the 1000 that I actually watch……….HGTV, E!, The Food Channel, Style, and ABC. I am sooooo ready to resume my normal blogging! So let it begin….. This morning I tried a new [to me] Bear Naked granola bar on my way to my 6 a.m. Power Pump class. So this pic is crap-ola…….this was taken literally on my way to class, sitting at a red light. I really liked the chewiness of this bar. I also had a cup of coffee with 1 truvia and skim milk. Class this morning was c.r.a.z.y! It probably has to do with me bumping up my weights AND the fact that no fans were going…..I was sweating like a mad beast. I think I’m really starting to see changes in my body. I believe I can contribute a lot of my changes to Insanity, but also the fact that I feel like I’ve been pushing myself a bit more during Power Pump. I was super productive this morning when I got home from the gym! I got ready, did laundry, packed my lunch, semi-prepped dinner, and cut up veggies for future eats. I also cooked myself and the hubs breakfast. Prepare to drool…… Pesto Omelet: 3/4 cup egg whites tomato, chopped onion, diced feta cheese pesto Directions: Cut up onions and tomatoes. Add to pan, sprayed with olive oil, over medium heat. When onions start to turn translucent, add egg whites. When eggs are beginning to set, add feta cheese to 1/2 of omelet and then fold in half. And finally, when omelet is cooked throughout, plate up and top with a smear of pesto. Enjoy! I had some fresh berries on the side of my omelet along with french pressed coffee with frothed skim milk and 1 packet of truvia. Lunch looks boring, but don’t let it fool you. This wrap was stuffed with a Chickpea Salad that was inspired by a recipe Tina just recently had on her blog. BUT, I couldn’t recall the exact recipe, nor could I look up the recipe thanks to our non-working internet. Therefore, I created my own. Chickpea Salad 1/4 cup chickpea [garbanzo] beans 1/8 cup onion, chopped 1/4 of an avocado, chopped sea salt, to taste ground pepper, to taste Directions: Add chickpeas and avocados to a bowl and smash. Add other ingredients and stir. I added this combo to an Ezekiel wrap with spinach and mushrooms. And enjoyed it with grapes. For my afternoon snack, I enjoyed some more my Dr. Kracker treats I really love these cherry semolina crackers. And they made for a nice pair with an apple and Chobani greek yogurt I got home from work tonight, and snacked on some Food Should Taste Good chips while laying on the sofa relaxing after work. When I finally decided to get up, I threw a quick dinner together and popped it into the oven, it included: chicken breasts onions red potatoes, cubed seasoning [no sodium] I made 2 aluminium foil tents, one for me and one for Russell, and threw them in the oven on 35oF for about 30 minutes or so. Hello deliciousness! So simple, so good, especially topped with some organic ketchup. Anybody else watching the Bachelorette?!?! Who’s your pick for Ali???
