Adopt A Gluten Free Blogger Event - Lexie's Raw Nacho Cheese Sauce

For the adopt a gluten free blogger event hosted by book of yum, I adopted Lexie from Lexie's Kitchen. I was drawn to her site because, not only is it very cute, but we both follow this diet for the well-being of our children. She cooks without gluten, eggs, corn, excess sugar/fruit, preservatives, and sodium nitrates.  We are not quite that strict around here, but we do steer clear of gluten, dairy, food coloring, and nitrates. We also only eat sugar, corn, and soy in very reduced amounts. I'm really looking forward to trying even more of her recipes.

Got all of my ingredients together--cheese sauce here I come!


I decided to make Lexie's raw nacho cheese recipe and was very impressed. It had a very cheesy flavor and didn't taste fake at all. I also thought that the red bell pepper was fabulous because it gave the perfect amount of sweetness and flavor. I poured this sauce over some Tinkyada elbow pasta and served my kids a delicious dish of gluten free casein free mac-and-cheese, something I have had trouble replicating. But now that I have this recipe I will be using it for a variety of dishes that have been missing in our lives. Thanks so much for this great recipe Lexie!!! ---I also had every intention of making Lexies Chewy Magic Peanut Butter Middle Cookies, but just ran out of time.



By the way, on Lexies latest post she wrote that she's taking a brief break from blogging because she has a family matter to attend to. I'm sure I can speak for everyone when I say that we hope everything is o.k. and to take all the time you need because family always comes first. We will be patiently waiting for your return.
