Almond molasses cupcakes

These turned out to be so tasty and moist, the kids absolutely loved them and I was so happy they were eating something so nutritous and healthy.


Ingredients



1 cup almond flour made by grinding 1/2 cup whole raw almonds
1/2 cup plain flour
1/4 cup whole wheat pastry flour
1 tsp baking powder
1/2 tsp baking soda
1/4 cup sugar
1/3 cup molasses (heavy)
1/4 cup ghee
1 tub skimmed or low fat yoghurt
1/4 tsp salt
3 eggs
1/4 tsp pure vanillin or 2 packets cooks vanillin
1/2 cup raisins (washed)

Directions


Beat the eggs, sugar, ghee, molasses and yoghurt with an electric or hand mixer, or in a food processor.


Mix all the remaining ingredients together, then add to the wet mixture gradually and mix untill just blended. Add the raisins.


Pour into 12 lightly greased muffin tins and bake in a 350 deg oven for 15 minutes, then turn the heat off and keep in the oven for another 5 minutes.
