Almond-Pistachio Vermicelli Milk Pudding/Badam- Pista Sevai Kheer
31/2 cups Milk(2%) 1 cup Vermicelli, broken 1 tsp ghee/clarified butter 1/3 cup sugar,adjust to taste 1/2 tsp. cardamom, crushed Pistachio nuts(powdered)-3-4 tblsp Almonds,chopped-1tblsp few saffron strands Method- Boil the milk in a saucepan and keep aside. Fry Vermicelli on a low flame in a tsp of ghee til its evenly roasted and becomes golden brown. Add chopped almonds.Once the vermicelli n nuts r roasted nicely slowly add the hot milk to it. Add sugar,pistachio powder,saffron. Keep stirring on a medium flame til vermicelli is cooked Add cardamom powder and mix well. Reduce heat. Simmer for 5 minutes, stirring in betn so that it doesn't stick to the bottom of the pan. Serve hot/cold garnished with nut powders.
