Almond Pudding / Badam Kheer

Now here is a special nutritious sweet treat that has no indian ingredients, so whether you are indian or not, you can make this! Over the weekend, it is typical I make a sweet treat in the evening. So when I was deciding on what to make for a lazy Sunday afternoon, I decided on Almond Kheer and K was all for it. It was my first try, and just like my other first try’s – I was content with the outcome. Now here is some health info – Almond reduces cholestrol and it boosts immunity. Almonds are also good for your skin and it provides you with Vitamin E, and makes you look younger and it keeps you fit … Now who doesn’t want to try this dessert hahah …


Ingredients:



Blanched Almonds – 2 cups
Sugar – 1/2 cup
Milk – 2 cups
Ghee (Clarified Butter) – 1/4 cup
Cardamom Powder – 1 tsp
Almond – for garnish

Begin by blitzing the blanched almonds along with some milk into a smooth paste.Melt some ghee (clarified butter) in a pan and add the almond paste and cook for 20minutes. The paste should get thick and golden at this point.


To this add the rest of the milk and the 1/2 cup of sugar. Stir well. Finally add the cardamom powder and even saffron if you have some. I let this cook for another 5-7mins and remove from heat.


This can be served warm or cold, so depending on what you would like, you can serve it immediately, or put it in the fridge and serve when it is cold enough.


Garnish with some almonds.
