Andhra Mango Pickle/Avakaya/Manga Oorugai/Aam Ka Achar

Ingredients:
6 cups sliced Raw Mango(Mangoes should be sour)
1 cup salt.
1 full cup Red chili powder(If u want to make it mild u can first add half cup and later u can add more to it)
1 full cup Mustard Powder
1 tsp Turmeric Powder
1 tsp Methi/Fenugreek Powder
1 tsp Methi/Fenugreek Seeds
3-4 cups Sesame/Peanut Oil
10 Garlic Cloves peeled

Method:

First wash the Raw Mangoes well and wipe it nicely with a cotton cloth and let it dry for 10 min's.
Meanwhile we can prepare the Mustard powder and Fenugreek powder( do not use readymade powder from the store,as pickle won't be fresh for longer time).
To make this powders grind them in blender to a fine powder.
Now slice the Mango into 2 inch slices and measure( be careful while slicing the mangoes).
Now add this slices into a large plastic bowl.
Now add Turmeric,Red Chili powder,Salt,Fenugreek Seeds,Mustard powder,Fenugreek powder,peeled garlic Cloves,Oil and mix all together nicely.
After mixing all the ingredients set this pickle aside covered in a safe place and let it marinate the pickle for 3 day's so that the spice mixtures is well mixed with the Mango slices.
On the 3rd day mix the pickle nicely and taste it and check weather Salt is correct or not if u feel its less add some more to it(If salt is not enough the pickle will get spoiled very soon so we should see that the salt is perfect in this pickle.
Now store the pickle in a Air tight glass jars or Porcelain container and store them.
This pickle can be preserved for more than a year.

Note:

Do remember not to use any wet containers or wet hands while making this pickle,otherwise the Pickle will get spoiled with in days.
If you taste the pickle immediately after preparing, it will taste salty. Do not think you have added more Salt or Chili powder.
It takes 5 days for the Pickle to get to its original taste.
While preparing the pickle you can't see Oil floating on the top.
By 3rd day the Oil floats on the top,if oil doesn't float on the top then add some more Sesame/Peanut Oil only on the 3rd day(sufficient Oil should be there for storage purpose).
Do not use any Stainless Steel and Aluminium containers for mixing and storing purpose.
Use only Plastic or Porcelain Containers/Jars for mixing and storing purposes.
Do not refrigerate this Pickle.
Keep the containers in a dry place.
