Arancini di Riso (Rice Balls)
I have no idea where I found this picture other than the internet Ingredients: Left over RisottoMozzarella cheese cut into cubes 1 each egg, lightly beatenParmigiano Reggiano Cheese (grated)Panko BreadcrumbsVegetable oil for fryingLeft-over Marinara Sauce Directions: Form the rice into balls and press the cheese into the middleRoll the rice balls in the egg mixture to coat.Then roll the rice balls into a mixture of Cheese and Breadcrumbs to coat.Heat the oil in a pan.Fry the rice balls in the oil until golden brown on all sides. Once you have these, you'll go goofy!!! This is some good stuff........... And the great thing is you can make them any size you want....... If you want to pig out on them, make them bigger, or if your on a diet, make them smaller..........
