Baby Soles and Flapjack Suzette

By Boogie Soufflé (Visit website)

Tonight Mark went to the dam, so I invited my friends Aidan and Davin for dinner. I was in the mood for fish, so I decided to cook baby soles. Soles are very delicate fish, so the trick is to lightly fry them in butter very quickly so that they don't dry out. Soles are my favorite cooked fish and we thoroughly enjoyed them. They were served with courgettes, patty pans, and baby potatoes in minted butter.

For Desert I made Flapjack Suzette, it should be Crepe Suzette, but I didn't have enough time to make crepes so I bought flapjacks from Pick 'n Pay. It worked well enough though, and made for a stress filled day at the heart foundation. Seriously this is not a diet food. You can get fat just looking at it, so look away quick:) I promised Aidan that I would give full intructions on how to make this dish, so I will post the recipe in the next day or so.

The wine that was imbibed (with enthusiasm) tonight was  Kleine Zalze's Gamay Noir Rose which is definitely one of my favorites. It is dry with a nose reminiscent of a Shiraz based rose. As far as I know this is the only rose made with Gamay Noir grapes in the country. A fantastic wine with fish, or with anything else.

I hope you guys enjoyed the post. I'm off to bed now, as I need to get up in 3 hours to go diving in the Magaliesburg! Crazy I know. Just nod your head and don't ask too many questions:)
