Black Eyed Beans Curry/ Raungi/ Lobia
Ingredients:
Black eyed Beans/ Lobia/ Raungi : 1/2 cupOnion:1(chopped)Tomatoes: 2-3 (chopped/ pureed)Ginger: a small piece (grated)Salt: to tasteRed Chilli pwd: to tasteTurmeric pwd: 1/2 tspOil: 2 tbspCumin seeds: 1 tsp Method: Wash and soak black eyed beans in ample water (~ 2 cups) for 30 mins.Pressure cook them with water (in which it was soaked) and salt. Take 2-3 whistles on high flame and cook on low flame for 30-45 mins.Seasoning/ Tadka:Heat oil in pan. Add cumin seeds. Let them splutter.Add onion and ginger. Cook till onion turns translucent. Add red chilli pwd and turmeric pwd.Add tomatoes. Cook till done.Add the seasoning to pressure cooked beans. Again take 1-2 whistles on high flame and turn off the gas.Ready to serve with chapati, parantha, nan or bread.
