Bonda (Savoury Potato Balls)
Bonda is an Indian savoury potato ball which can be served as a snack or finger food. Plenty of flavours inside especially with adding chillies and curry leaves inside. If possible, once done with the frying, serve immediately while still hot and warm. Ingredients: 3 medium size potatoes (boiled and mashed) 1/2 cup frozen green peas 2 green chillies (remove seeds and sliced thinly) 1 red chilly (remove seeds and sliced thinly) 3 small shallots (sliced) 1 tsp mustard seeds 1 tsp kunyit/saffron powder 1 sprig curry leaf 2 tbsp oil salt to taste To Coat Before Frying 3 tbsp gram flour 1 tbsp oil enough water and salt oil for frying Method When the 2 tbsp oil is heated, fry the chillies, shallots, mustard seeds as well as add the saffron powder in. Keep stirring for 3-4 mins. Onto this, add the mashed potatoes, curry leaves, peas and salt to taste. Stir all together until it becomes a thick paste. Remove from heat and let it cool down. Roll bit by bit of this paste into individual balls. Mix all the coating ingredients together to make a thin batter.Dip the potato balls inside the batter, fry until golden brown in colour and remove.
