Breakfast Fit For A Queen
I woke up this morning with the sun and a growling tummy. For some reason though, I didn't actually eat anything until almost noon. So, breakfast turned into brunch! Hubby and I debated for a while what we should eat... he wanted eggs and I wanted pancakes. Eventually, we decided to cook both.
I started out by cleaning strawberries and blackberries, putting them in a pan and sprinkling them with 3 teaspoons of organic sugar. I let them simmer on low for about 15 minutes or so... ![]() My husband wanted to get in on the picture taking also. He took this picture and then proudly announced that he takes cooler pictures than me... He may be right, but I'm not going to tell him. {wink, wink} I always use Kodiak brand pancake mix... I also warmed some Morningstar "sausage" links... I used our festive holiday plates... My mom gave me a whole set of these plates one year for Christmas... Pancakes are served... Looking all fluffy and good... A steaming bowl full of berries... Here's my plate full of food... For our eggs, I cooked "eggs in a basket." This is one of Prashant's favorite ways to eat them. I know this looks like a ton of food, but calorically, it's not that bad. Everything together came out to be about 600 calories... Divided into breakfast and lunch that's 300 calories for each meal. I finished almost everything on my plate, except for a few bites of the pancakes. A meal like this will keep me full for many hours! Later this afternoon, we are going to Prashant's parent's house for dinner. I cant' wait to eat his mama's delicious Indian food! I'm a lucky, lucky girl!! Have a great Sunday!
