Brinjal Chutney, Vankai Pacchadi
Hi Friends,
I am back after a very long vacation. I certainly missed updating my blog and also all your encouragement the last one month. I went to many places across Andhra and well I certainly learnt to make some more lovely Andhra recipes . Its interesting to see how people make simple but very tasty and nutritious food in the villages . I will talk about brinjal chutneytoday . It is also known as Vankai pacchadi in Southern India. Ingredients: Brinjals ? 250 gms Corainder ? 1 bunch Onions ? 5 Green chillies ? 4-6 Red Chilli powder ? 1/2 tea spoon Tomatoes -3 Procedure Take 2 table spoons of oil and heat on low flame. Add the brinjal, chillies and onion pieces when the oil is hot. Keep this on a low flame till the brinjal and onion pieces are cooked. Then add the tomatoes and the chopped corainder leaves. Wait till the tomatoes are also cooked and1/2 tea spoon of red chilli powder and cook for another 5 mins. The chutney is now ready to be served with hot rice.
