Butternut Squash & Sweet Potato soup - very easy
2 bags of Waitrose ready prepared butternut squash & sweet potato (350g each bag) 1 med. onion Garlic S&P, little dried thyme and oregano (marjoram) olive oil and knob of butter Vegetable or chicken stock, + small amount of milk. Method: I used my micro. but you could saute the squash and sweet potato, garlic (crushed) and chopped onion in a pan with some good olive oil and a knob of butter. Cook until veggies are softened, then add enough stock to well cover, and herbs, and cook for a little longer until well cooked. Taste for seasoning and add a little more stock if necessary. When soup is done, leave to cool so flavours can blend together. Add to liquidiser and whizz until smooth, - adding more stock and a little milk till you reach the consistency you like.
