- Peel the butternut and take all the seeds out. Cut it into dice.
- In a big pot, melt some butter. Then, cook the chopped onion in it, and add the butternut dice.
- Cook for 5 minutes, then cover with water. Add the stock cube, salt, pepper, and bring to a boil.
- Once it is boiling, cover and leave 25 minutes at medium heat.
- Put it all in the blender, add the hot cream, and blend.
- There you are, your butternut squash velvet soup is ready!
