Capsicum Rice

I haven't seen my mom buying Capsicum or preparing any receipes using it a few years back. But then one day suddenly she prepared this rice and it was a surprise for us. The dish was so tasty.She was told by one of her
friend that Capsicum is rich in Vitamin A,C and proteins too.Its true that most of us actually don't know the real medicinal values of this vegetable.It helps in controlling the Sugar level in our body and also prevents skin related issues. So people start using capsicum in your cooking atleast once in a week and stay healthy.

Lets move on to the preparation.

Ingredients :

Capsicum - 3
Onion - 1
Tmato - 1
Salt - 2tbsp
Roasted Peanuts - 1tbsp
Chilly Powder - 1tbsp
Corrainder Powder- 1tbsp
Ginger-Garlic paste - 1/2 tbsp

Oil,Water for cooking. Corrainder leaves for garnishing.

First we will prepare a mix using the above said ingredients and then we can add it to plain white rice.

Method of Cooking :
1.Heat oil in a frying pan and add mustard seeds,roasted peanuts,urad dal,channa dal,curry leaves.
2.Let it splutter. Now add the chopped vegetables (capsicum,onion,tomato).
3.Add chilly powder,corrainder powder,ginger-garlic paste,salt and saute for few minutes.


4.The mix will be ready in 7-10 minutes.
5.Add this mix to white rice and finally garnish it with corrainder leaves.


You can have this rice with Raita,Potato fry or Pappad.
