Cheesy Beef Taco Casserole
Ingredients 1 lb ground beef 1/2 onion, diced 4 tablespoons taco seasoning 1/2 cup shredded cheddar cheese 1/2 cup water 1 cup milk 2 cups uncooked egg noodles 1/2 cup of salsa 1 cup of mixed cheese shredded (I prefer cheddar, monterray jack mixture) 1 large hand full of crushed tortilla chips (unsalted) or about 3 taco shells crushed. Directions 1 Brown ground beef and cook with diced onions. After the beef is cooked drain. 2 Put back in the pan and add and mix well the seasoning, milk, water and cheese let it come to a slight boil. 3 Add the egg noodles let the pan simmer for about 10 minutes until egg noodles are cooked and sauce has thickened, then add the salsa & mix well. 4 pour into a large casserole dish. 5 Mix 1 cup of mixed cheese with the crushed tortilla chips or taco shells and pour over top. Bake at about 350 degrees till cheese is golden brown. Allow to stand for 5 minutes & serve. **NOTE** For more of a kick add cayenne pepper to suit personal taste!
