Chicken Caesar Salad Pizza

My favorite place to hit for lunch during the work week is Carrabba's Italian Grill.  I know it's probably uncool to name a big restaurant chain as being my favorite, but I really like it there.  Apparently this particular location that I go to is the only one in Florida that's open for lunch...at least that's what the hostess said.  Every time I'm there I almost always order the same thing, the Chicken Caesar Brick Oven Pizza.  It's this amazing little pizza with a bit of pesto, mozzarella and Parmesan cheese topped with a Chicken Caesar salad.  Pizza with a salad on it, it's practically health food. Heh!



I was craving it in the worst way this weekend so I thought I'd try making it at home. I took a line here and a line there from different recipes and put it all together. 


Ingredients 

For pizza

1 thin pizza crust 1 cup shredded mozzarella cheese 1/4 cup shredded Parmesan 2 tbsp Caesar salad dressing  2 tbsp pesto 2 tbsp olive oil 1 clove garlic, peeled
For Salad Topping:
4 cups hearts of romaine, chopped8 ounces cooked or grilled skinless chicken breast, sliced 1/4 cup Caesar salad dressing 1/4 cup shredded Parmesanblack pepper Directions 


Preheat oven to 400?F.  Roll out pizza dough and press into a greased pan.  Brush dough lightly with olive oil.  Sprinkle with Parmesan cheese.  Bake for 15 minutes or until crust is slightly golden.

Remove pizza crust from oven.  Cut the tip off the garlic clove and rub on the crust.  Spread the pesto and Caesar dressing over crust, sprinkle mozzarella cheese, and pop back into the oven until the cheese melts, about 2 minutes more.

In a bowl toss romaine and chicken with 1/4 cup dressing, 1/4 cup Parmesan, and fresh black pepper to taste.  Remove pizza from oven and serve up the salad on top of pizza.



This was definitely good enough to curb my cravings.  I cheated though.  I used store bought pesto and pizza crust from a canister. Fast and easy.  :)
