Chicken Pesto Wraps

Things That I Love: Episode 1



1. Dad's ingenuity. For example, to make heating up the pool in these first days of May (yes, that's when summer begins at The Noshery) cheaper and more efficient, he is heating it with a bonfire. He's running all the pool water through a huge copper coil which is wound around a huge constantly stocked fire. It's already risen at least ten degrees.







2. Target. I could literally stay in there all day. I love every single thing there and I love the prices. I should not take my credit card in there. Not a good idea.



3. The popcorn at Target. It's so salty and good. Not the best popcorn in the world, but it completes the Target experience. I get a lot of disgusted stares as I frantically devour my popcorn as I stroll down the isles, overwhelmed by all of the awesomeness. Today when we first got there I asked Piggie if she wanted some popcorn. She shrugged and said no.

"WHAT? What? What? Are you okay??"

"Yeah." She said, "I don't want any."

"What? What? What? What?....." I trailed off as I disappeared into a forest of swimsuits. I felt that a new swimsuit would be helpful, since the pool is presumably almost ready for swimmers (and floaters). I decided that I was too fat to try on a swimsuit today though, so I found some coverup shorts instead.

When I came back to the food area, I found Piggie standing there innocently with a huge bag of popcorn.

I burst back into another round of, "What? What? What? What?", but somehow, I really wasn't surprised at all.



4. Using up leftovers in wraps.



Chicken Pesto Wraps



Two plain, cooked chicken strips, cut into chunks

1/4 of a white onion

2 teaspoons butter

1/4 cup mozzarella cheese

2 tablespoons pesto

2 soft tortilla shells



Saute the onions in butter. Add the chicken and cook till warmed. 

Top the tortilla shells with the chicken and onions and cheese.

Toast on medium high heat on the stove until cheese is melted.

Top each with pesto.
