Chicken with Apricot Sauce
I wanted an easy sauce I could serve over grilled chicken tenders. It took a while to reduce but it didn?t require any effort, I just had to make sure it didn?t all evaporate away! I made the sauce ahead of time and then just reheated it when I was ready to cook the chicken. Chicken with Apricot Sauce 1 package of chicken tenders 3 ripe apricots, sliced 1 large spring of fresh rosemary 1 can chicken broth Honey, to taste Put chicken broth, apricots and rosemary in a small pan. Bring to a simmer and allow to reduce. When it has reduced by at least half, add some honey and reduce further. Reduce until you have just a few tablespoons of liquid. Add additional honey to taste. You might also consider adding some red pepper flakes for heat. Cook chicken tenders on the grill. Serve with the apricot sauce on top! related searches : Chicken
