Croatian Lemon Wafers
![]() These wafers bring back fond memories of visiting my husband's grandmother (Baka). My mother in-law and myself would sit at the dining table to have coffee with her and Baka would constantly keep pushing the round, red biscuit container towards us. It would be filled with these delightful, tangy, creamy, lemon wafers. They are pretty easy to make and the taste really is lovely. Ingredients: 1/3 of a cup of plain flour1/4 of a cup of sugar200ml of milk1 egg225 grams of unsalted butter2 and a 1/2 cups of icing sugar, siftedThe juice and rind of 1 lemon1 packet of wafer sheets, (5 sheets)Method: In a small saucepan and using a balloon whisk, mix together flour and sugar. Crack the egg into the milk, lightly beat and slowly mix into the flour sugar mixture.Place saucepan over medium heat and whisk continually until the mixture comes to the boil and thickens. Leave aside to cool to room temperature.In a medium bowl beat together butter, icing sugar, lemon juice and rind until light and creamy. Leave aside.With hand mixer beat the cooked, cooled flour mixture until smooth and add to the butter mixture.Beat together until combined and smooth.Divide mixture into four and spread over wafer sheets, finishing with a clean wafer on top.Refrigerate over night and cut into small squares.
