Curd Rice(Dahi chawal)
Curd Rice Ingredients:- Rice- 1 cup (boil it with 3 cups of water adding some salt,as meshy rice is good for curd rice) Curd-2 cups Green chillies-2 Coriander leaves -few springs For tempering(tadka):- Mustard seeds-1/4 tsp Cumin seeds-1/4 tsp Urad dal-1/2 tsp Whole red chilli-1 Cashews/peanuts-8-10(broken pieces) Curry leaves-6-7 leaves Method:- Mix the cooked rice with curd,adding green chillies and coriander. For tempering,heat oil in a pan.Add whole red chilli,mustard seeds,cumin seeds and let them crackle. Add urad dal,saute till it gets light brown colour. Add cashews/peanuts and curry leaves. Add the tempering into curd rice and mix it. Serve it cold. Tips:- If curd is sour,then add some milk in it and if curd is very thick then add some water.
