I decided today to make another recipe from the Heart Healthy cookbook posted/reviewed yesterday. This one is Chicken Breasts with Roasted Red Pepper Sauce.
Soooo good and healthy! And bonus: super quick and easy! This is probably the quickest dinner I’ve ever made…aside from reservations. It’s only a few steps: Sprinkle some spices on the chicken; Cook the chicken thoroughly in canola oil and set aside; Blend a red pepper and jalapeno pepper until smooth; Add the pepper sauce to the skillet with the chicken juices and heat for about 15 seconds; Top the chicken with the sauce. Voila! Dinner!
