(3.00/5 - 4 votes)This was the first cake i ever made. In the first attempt itself it came out really good. I still wonder, why this cake is called Lazy cake. May be we wont be able to stop eating by having one bite and will lazily stick around till the last bit is finished. :-)

Ingredients:Banana - 2
Eggs - 2
Jam (any flavour of your choice) - 1/4 cup
Refined oil - 3/4 cup
Grated coconut - 1/4 cup
Sugar (ground) - 1/2 cup
Baking soda - 1 tsp
Maida - 1 cup
Whole wheat flour (atta) - 1/2 cup
Preparation:step 1
In a mixie or a blender add bananas, eggs, jam, refined oil, grated coconut, sugar. Blend it to a very smooth consistancy. Transfer this mixture into a deep bowl. Keep this aside.

Sieve maida, whole wheat flour and baking soda together for approximately 3 times.
Preheat oven at 180 degree celcius.

Spread butter or refined oil on a baking tray and line it with a butter paper in the bottom.
Into the blended mixture, add the dry ingredients little by little. Mix properly. Always mix it using a wooden or a plastic spoon and only in one direction.

When the batter is properly mixed, pour it into the prepared baking tray.
Place it in the oven for about 40 to 50 minutes. Always check by using a tooth pick, whether the cake is cooked or not.

Once the cake is done, remove it from the oven and give a standing time of about 5 minutes.

When it is cooled turn upside down by holding a plate on top. The cake will come out of the tray easily. Place it on a wire rack till it is cooled completely.

Cut into pieces and serve.
