Dinner and a Movie: Let Them Eat Tarts

As you may or may not know I am, in fact, the princess of my own little world. In this magical land of lore, beautiful boys bring me fresh fruit with Pbu while I lie in the ever-shining sun, making daisy chains and wearing Zac Posen. Unfortunately, I'm only allowed to visit said kingdom in my dreams.

Day-to-day existence is dishearteningly crownless and my unlimited political power is severely limited. To comfort myself I like to pop one of my all-time favorite films in and play it over and over on mute, while completing menial labor--the perfect visual "soundtrack" to stimulate this little curly brain.

On this particular afternoon, I was sitting in my favorite apple green tufted chair, working on a design project, with Marie declaring, "Let them eat cake", in the background, when I suddenly had an undeniably strong craving for something light, sweet, and fit for a fabulously-shod queen.

After poking around the kitchen for a few minutes I stumbled across the most darling tart pan ever and a lemon Larabar that had been hiding under my stash of dried fruits. When I spotted a lemon on the counter I knew that fate had destined this innocent Larabar for greatness following a quick and dramatic beheading. Fame is always amplified in death, my little friend.



Fit for a Queen Mini Lemon Tart

(serves one magnificent monarch)

1 lemon Larabar
1/2 cup "Creme" (low fat ricotta, cottage cheese, or soft tofu)
Sprinkle of lemon juice
Stevia, agave, or sweetener to taste

Break the weeping Larabar in half (Do be sure to do so quickly! We wouldn't want to prolong her suffering) and press into tart pan or small bowl. In a separate container mix the ricotta with lemon juice and sweetener. Scoop into crust, top with a cherry, and run around declaring, "C'est la vie" to the masses.

I see many marvelous possibilities for this tres adorable treat.

Different combinations of Larabar and "creme" fillings incude:

Apple Pie Larabar Crust + Applesauce + "Creme"

Coconut Cream Pie Larabar Crust + Coconut Extract + "Creme"

Banana Cookie Larabar Crust + Almond Extract + "Creme"
