Do you eat your veggies? & Trip Recap
I hope your Thursday is off to a beautiful start. Since I missed WIAW yesterday I figured I would start off by sharing a few of my delicious meals this week. Breakfast has been the same each day, toast with peanut butter, coconut, and flax and a giant assortment of fresh fruit. Lunch was lentils with some veggies and the amazing fresh salsa. My workout was a long walk on the beach and arm weights followed by an Amazing Grass green superfood shake for a snack. Dinner was more delicious veggies, rice, salsa with chips, and a mixed bean salad. I am actually pretty impressed with the food here and have had no problem finding plenty of veggies each day. When I wasn’t eating I spent my day swimming in the pool and in the ocean winning twister competitions and spending time with my wonderful parents. When it comes to healthy eating, we?re supposed to eat five servings of fruits and veggies a day, right? Well, it isn?t so easy! I don?t know about you, but bowls full of lettuce and carrot sticks don?t exactly appeal to me all of the time. Although I?d love to eat carbs and nut butter all day long, I?m sure my body wouldn?t appreciate it?plus, I?d never want to get sick of nut butter! Sometimes, veggies just need a little pizazz, that way, you?ll enjoy them even more. I?ve created a few different recipes involving good ol? veggies that we all probably have lying in our fridge or freezer right this very moment. A few tips about adding more veggies to your diet: 1. Sautee some bell peppers, onions, carrots before adding them to homemade or jarred tomato sauce. Your sauce will be thick, chunky and packed with veggies. Questions: What are some of your tips for getting lots of veggies in your diet? green smoothies & green juices are always my go to when I want to get lots of green fast, I also love stir frys !
