Apple Crumble Muffins

Fall is almost here and all I can think about is warm and cozy foods. In Louisiana, as soon as you feel just a slight sign of a cool autumn breeze you start hearing people immediately talking about cooking their favorite stews, chili, warm biscuits and gravy, and especially their seafood gumbo. But in my kitchen, I immediately start thinking about warm and cozy fall desserts or snacks. A couple of days ago, I posted an apple raspberry crumble and to keep this fall dessert/snack thing going I am posting a warm apple crumble muffin sweeten with honey and topped with an apple pie glaze.
The best breakfast snack to have on a cool autumn day, especially in Louisiana!!
Ingredients:
1 cup KA Unbleached All Purpose Flour
1 cup KA Unbleached Whole Wheat Flour
1 tsp. baking soda
1 tbsp. baking powder
1/2 tsp. salt
1 egg, room temperature
1/3 cup Honey
3/4 cup Plain Yogurt
1/4 cup apple cider
1/4 cup melted butter
1 tbsp. cinnamon
2 peeled, cored, sliced apples
In a large bowl combine each flour, baking soda, baking powder, salt, and cinnamon. In another bowl mix egg, honey, yogurt, apple cider and butter. Pour liquid mixture into the dry ingredients and mix well. Gently fold in the sliced apples.
Topping: A Soft Crumble?So Beware of Crumbly Pieces around the mouth ;)!!
1/4 cup of Whole Wheat Flour
1/4 cup oats
1/4 cup pecans
4 tablespoon cold butter
Pinch Salt
6 tablespoon brown sugar (if you have a sweet tooth) I did not use
In a food processor blend all ingredients until it resembles a crumbly mixture. Spoon batter into the muffin tins. If you are not using any cupcake holders you may want to grease the muffin tins before spooning the batter. Sprinkle each muffin with the crumble topping.
Bake muffins in a preheated 375 degree oven until they are golden brown or 25 minutes. Remove muffins from pan and cool completely.
