Eating good

Sitting here on the sofa with my hubby by my side, watching Rush Hour 3 on tv, and laughing at the cats trying to chase each other on hard wood floors.  Ahhh life is good!  :D


Breakfast


Feast your eyes on this pretty and colorful bowl full of oats:



Freakin’ delicious!!!!  In the mix:



1/2 cup oats
1 cup water
1 scoop chia seeds
1 banana
spoonful MaraNatha PB
dried mixed fruit


Coffee was from the keurig this morning, instead of french pressed.  I did a double brew with 1 packet of truvia and frothed skim milk.  I’m out of coffee beans.  What’s your favorite brand of coffee???  I’m off to buy some tomorrow.


That was a tasty way to start off my day!  Rocky hung out with me during breakfast this morning, too.  :)



He’s so funny.


Lunch


The good food vibes from breakfast continued on into the rest of the day…..Holy yum on lunch!



I made an apple and carrot quesadilla:  Ezekiel tortilla with Naturally More almond butter, apple slices, and carrot shavings



I toasted it in the office toaster oven for just a few minutes.  The only thing this ‘dilla was missing was some cinnamon…..Mmmm!


I also enjoyed carrot sticks, apple slices, and some celery topped with light swiss cheese on the side



Lunch was sooo good and very filling.



Snack


Does coffee count as an afternoon snack?  Starting about 2:30 I began texting Russell begging asking him to bring me coffee…..a Friday afternoon pick me up was sooo necessary!



Does this mean that my Starbucks hiatus is over?!?!  Ehh….to be determined.  I still haven’t been to our local Starbucks in over 2 weeks….that is a record for me!  Russell brought me a tall misto with skim milk, I added truvia to it.


I also enjoyed a homemade parfait for snack




Plain, low-fat yogurt
maple granola
blackberries

I layered it early this morning and let it sit in the fridge all day



I’ve decided this is my favorite way to enjoy a parfait…..layered and made a few hours ahead of time so the granola has a little time to get soft and yummy!!


Dinner


I was craaaving pizza by the time I got off of work. 



Where else would we go other than the ‘Shroom??  It’s been far too long! 


My sister also joined us for dinner…..she ordered a bruschetta for the table



Is this not the prettiest plate of bruschetta you’ve ever seen??  I was quite impressed with the presentation of it.  We were all unsure initially what the chocolate-looking sauce on the bruschetta was……it ended up being balsamic vinaigrette.  I ate 1 piece of the very flavorful and delicious bruschetta and saved the rest of my hunger for my mega veggie pizza….


 


I had 2 slices, and enjoyed every last bite!



I don’t know if I’m gonna make it through this whole movie, I’m yawning like an old man.  :D
