Eyeball Cookin?

Another day has come and gone…..lots of good eats to write about!!!  I swear I think I have been hungry all freakin’ day long!  Anybody else have days like that???  I’m gonna blame my all-day hunger on my killer workout this morning.  Let the eats begin…….


Preworkout snack:



Not the whole container of almonds, just one handful.  And with only 5 hours of sleep….coffee was a MUST!  Newman’s Own Organic coffee made in my Keurig with 1 truvia and skim milk. 


Kim met me at the gym this morning…..I’ve sooo missed my workout buddies this week!  Kim and I knocked out 30 minutes on the elliptical, stretch., errrrr STOP….story:  Kim and I walked up to the stretching area today and guess what was there waiting on me……a REAL foam roller, not the hard, not-a-real foam roller I’ve been using there for the last month!!  I felt like such a valued gym member…..I know they bought that baby just for ME!!!  :)   Okay back to original story……so we stretched following elliptical and I really do think the IT band is healing….YAY!!  Then Kim and I proceeded to kill our legs!!!  Ouch….my legs were shaking after I got home, while cooking breakfast….


Breakfast Pizza:



Whole wheat tortilla
Pizza sauce
bell peppers
onion
mushrooms
spinach
3 egg whites
cheese (I used Monterey jack)


Preheat oven to 350F. Chop onion, mushrooms, and peppers.  Saute up spinach, mushrooms, and onions over medium heat. 



While sauteing veggies, place tortilla on a baking sheet and spoon on pizza sauce. Add peppers and sauted veggies when done cooking. 



In same pan that veggies were just in, add 3 egg whites and scramble over medium heat. Add eggs to pizza and top with cheese.  Place baking sheet into oven for about 10 minutes.




This breakfast pizza was delicious!  Mine was a little to full to pick up and eat like pizza, but it tasted just as good going down thanks to a fork.  Also pressed coffee with 1 truvia and frothed skim milk. 


After breakfast I got ready for work and headed into the clinic for the day of craziness.  Within an hour of getting there, I was pretty sure my stomach was gonna eat my liver!!  Thank goodness for snack-stashes!!



Larabar to the rescue!!! 


I didn’t have time to pack my lunch this morning so I just planned on coming home for lunch.  Today was one of my co-workers birthdays so lunch was called in…..YAY for it being called in from one place that I actually enjoying takeout from, Jason’s Deli




I decided on the Veggie wrap with fruit on the side.  I ordered the wrap with no guacamole to save a few calories.



Is that not the most pitiful looking veggie wrap you’ve ever seen!?  It hardly had enough veggies on it!  Plus it didn’t come with any salsa like it was supposed to so it was a little bland.  I’m pretty sure I was still hungry even after eating lunch. 


Since I was planning on going home for lunch and didn’t, I was not prepared with an afternoon snack.  Meet my work BF and my snack-savior of the day:

Totally gobbled this thing up! Yuuuum!  Also an hour or 2 later I began rummaging through my snack-stash again and came up with this combo:



Applesauce + raisins = not half bad!  I’m thinking my snack-stash is gonna have to be replenished here really soon.


Dinner:


Dinner tonight began by chopping up a sweet ‘tator and cleaning up some brussels sprouts



Next, I added them to a gallon size Ziploc bag with olive oil, fresh ground pepper, and sea salt….shake, shake, shake…..dump on cookie sheet and into preheated (350F) oven they went. 


 


Next, I began on some turkey burgers.  Added ground turkey to a bowl, added organic ketchup, mustard, dash of sea salt, and fresh ground pepper.  Mix well with hands.



That doesn’t look very appetizing, does it!  :)   I formed mixture into 4 turkey burger patties and placed them on the George Forman for about 10 minutes. 



These were by far the best sweet potato fries I’ve ever made!  Russell really liked the turkey burgers too!  I ate 1/2 of an Arnold’s Thin with 1/2 of a Laughing Cow Cheese, topped with ketchup and mustard.  Such a good and filling dinner for my, “I’ve been hungry all day belly.”


Just reread through this post……sorry that there are no exact measurements on, on well…..anything!  I like to call this eyeball cookin’…..if it looks good, it’s gotta taste good, right?!?!  :)


Randomness of the Day:



Cat’s like brussell sprouts….well to play with anyways!  :)



Funny kitty!  T.G.T.I.F……..Thank God TOMORROW Is Friday!!!  :)
