Fall Teasers
I must have kid myself into thinking it was more fall like than it really was today. Now that I've started on all of my favorite fall foods, like pumpkin and squash and apples, there is just no stopping it. This morning, I pulled out an old fall favorite for breakfast. Stuffed Autumn Apples It's very simple to make these. You take one Honeycrisp Apple, core it and scoop out a the flesh to make a big cavity in the center. Then stuff the hole with a mixture of dry oats, raisins, apricots, cinnamon, agave, and walnuts. Baked at 350 for 30-35 min. In an effort to clean out the freezer, I'm finding products I even forgot I had. I've never been one for frozen pancakes, but I was sent a coupon for these and decided they seemed worth trying. I had 1/2 my Baked Apple with one Sweet Potato Pancake, Honey Vanilla Yogurt and a little granola. Quite delicious. The pancakes were actually pretty good, but I think my apple and yogurt mess overpowered the flavors. I'm interested to try them on their own. I did the usual Sunday errand thing, came home, and put together some meals for the week and for my sister. I also started packing a bit by cleaning out the pantry and shelves an packed up a bunch of food to take to my sister's house. Little progress but it's a start. I must have worked up an appetite because I suddenly became quite ravenous for lunch. One of my favorite combos: 1 Slice Whole Wheat Tuscan Bread, Dijon, Pesto, Soft Scrambled Egg, Crofters Jam Side Salad: Romaine, Zucchini, Strawberries, Asparagus, Walnuts, Hummus, Feta Perfect! And if you have yet to try eggs and jam, I promise you won't be disappointed. After lunch, I headed over to my sister's house to visit the little love of my life. He was all geared up for his first Eagles Game!! Uncle Toly even stopped by and we realized they were dressed almost exactly alike. Too cute!! I spent the afternoon hanging with the little guy and let my sister have a little break. She needed to eat and rest, so I happily took over for the afternoon. I eventually preyed myself away and came home to tend to my other love. Thankfully, I did dinner cooking all day in the crock pot so it was all done by the time I walked in the door. Butternut Squash and Apple Chili This was similar to my favorite chili: Pumpkin and Black bean. But the apple gave it a touch of sweetness. Still rather spicy though, but I do like it hot. :) I also whipped up some pumpkin cornbread to go with the chili. This is one of the best things in the world. I use an all natural Corn Bread mix and add pumpkin to replace the eggs and oil. It turns out so much better than any corn bread I have ever had. Wow, this weekend did just fly.
