Flavoured Shortbread and Burrito Bake
Last week at work I was staying with an elderly man while his wife went out. She asked me to make her some shortbread, and she left me with the recipe and ingredients...after she left i discovered the recipe was in OUNCES! Now I have no idea what a pound is let alone an ounce. I was lucky she happend to have a cookbook in her apartment which had a conversion table in the front :)
Anyhow, the next day I decided to use the elderly couples recipe to make my own shortbread. I wanted however to try a variation and added orange zest and chocolate to one half of the dough, and cherries and almonds to the other half. Both batches turned out really well, I deffinatley liked the orange, chocolate dipped shortbreads the most and would really reccomend trying them for yourself. Shortbread 7 ozs (220g) butter (I used nuttlex) 3 ozs (90g) caster sugar 9 ozs (280g) plain flour 2 ozs (60g) rice or cornflour (I used cornflour) Vanilla essence - Cream butter and few drops vanilla. Thoroughly beat in caster sugar. - Add sifted plain flour and rice or cornflour. - Mix, then knead into a dough. - Roll dough into long rolls and cut into slices ¼ inch thick. ( I rolled out the dough and used a round cookie cutter) - Bake in oven 25-30 minutes or until nicely coloured. (I baked mine in a 200 degree oven for around 20 minutes, but be sure to check on them as they can burn quickly!) * Variation: Add the zest of ½ an orange and mix through the dough. Once cooled, melt some chocolate and dip half of each shortbread in chocolate. * Variation: Add chopped glaced cherries and mix through the dough. Then top each shortbread with an almond before baking. Lately, I have been missing my regular visits to my favourite mexican restaurant Cha Chis, so decided to make a recipe I had seen popping up on the internet. I researched a few recipes and came up with my own variation for a burrito bake, and topped it with gaucomole and a side of smashed potatos. Burrito Bake 8 Tortillas Filling: 2 Tbsp oil 1 small onion, diced 1 medium red capsicum (pepper), diced 1 can or ½ jar tomato puree 1 can mexi beans 2/3 C water ½ can sweetcorn 1 zucchini, chopped Salt and pepper Approx 6 C cooked rice Sauce: 1 can or ½ jar tomato puree 1 teaspoon chilli powder Pinch cayenne pepper Topping (idea from this blog): ¼ C vegan mayonnaise 2 Tblespn tomato sauce 2 Tblespn lemon juice - Saute onion, capsicum and zucchini with the oil for 5 minutes, then add corn. - Add tomato puree, mexi beans, water, salt and pepper, and simmer for 5 minutes. - Add the cooked rice and combine well. - On the bottom a large dish, place a small amount of sauce (combine sauce ingredients prior). - Place a tortilla flat and fill the middle of the tortilla with the rice/vegetable filling. Roll up sides and place seam side down in the dish. Repeat with remaining tortillas. - Top tortillas with remaining sauce and then drizzle over topping (combine topping ingredients prior). - Cook in a 200 degree oven for 20-30 minutes or until the top of the bake indicates it is cooked. - When serving, top each burrito with guacamole. Guacamole 2 medium avocados 1/8 onion, chopped finely 1 ½ Tblespn sweet chilli sauce ½ tomato, diced 2 Tblespn rice or soy milk salt and pepper - Mash avocados in a bowl. Add onion, sweet chilli sauce, milk and salt and pepper. Mix well.- Add tomato and mix lightly. Oh I almost forgot, for the smashed potatos, I just quatered some potatos, boiled them for about 10 minutes until just soft and then using a fork mashed into each quarter, brushed with melted margarine, sprinkled with paprika, dried mixed herbs, salt and pepper and cooked in a 200 degree oven until browned and crispy.
