Foie Gras Wars!
Well I would hate to ask for any trouble here but I am just going to put my self out there just a little. I LOVE FOIE GRAS! I always have, and hopefully always will. From the first time it ever touched my tongue I knew it was something special. I just never knew it caused so much controversy the last few years. For those who haven’t read my blog before, I am a professional chef by trade who got out of the business in 2006, right about the same time the Foie Gras Wars were coming to a head. I followed it a bit, but I guess I disregarded it for the most part thinking at the time, this will never get any momentum. Well, apparently I was wrong. I am now about half way through the book I am just amazed of all the national and international attention that was brought to these lovable, force feed ducks. Laws passed, business shuttered, people intimidated and for what, to make a statement about low hanging fruit, the Foie Gras industry. So small and so insignificant compare to the huge Chicken, Beef or Pork industries. I wont get into it in detail here as it is too big and too wide of a discussing. For those of you how want to find out more, please read these two books. Foie Gras Wars by Mark Caro. A truly great piece of writing that takes an unbiased opinion of the subject. Foie Gras: A Passion by Michael Ginor the owner of Hudson Valley Foie Gras. He detail this 5000 year old industry in the first 90 or so pages then is packed with recipe after recipe of some of the greatest chef featuring, you guessed it foie gras!
