S and K?s dinner tonight is a Mediterranean Feast. I?m slightly obsessed with really light, summery flavors at the moment?I can?t get enough. The smell of lemons and fresh herbs just makes me happy this time of year.
First off?tabbouleh. In the mix: parsley, mint, lemon juice, olive oil, roma tomatoes, bulgur wheat, scallions. Such a light and fresh grain salad. Next up, hummus. I always feel the need to say ?There?s hummus among us!? when I make this stuff. Don?t ask why, I just do! This was a blend of chickpeas, sesame tahini, olive oil, lemon zest and juice, garlic, salt and pepper. I also grilled up some chicken and put it on a bed of mixed organic greens for a little protein action. Oh, and of course there was some whole wheat pita for dipping into the hummus too? I attempted to make the hummus in my new Blendtec blender but had to relocate to the food processor. It wouldn?t combine for some reason! But I did have some success in the Green Smoothie department today using the blender? Seriously the creamiest green smoothie ever. And it took 22 seconds exactly. Not a speck of spinach to be found! When I use our Breville Blender I have to blend for like two minutes to make sure all of the spinach is pulverized. Okay, so I?m a bit impatient to not wait an extra minute and a half, but seriously this blender has got some power.
