Greek Pulao ( Pilaf )
![]() Greek Pulao ( Pilaf a la Grecque ) A Greek speciality Serves: 4-6 Ingredients 60 gm butter 350 gm Amira indigo long grain rice soaked in water for 30 minutes 100 gm onion chopped 20 gm garlic crushed 225 gm button mushroom sliced 15 gm salt 5 gm black pepper 750 ml chicken stock 1 bay leaf 1 lemon For garnish: 30 gm silvered almond 30 gm raisins 60 gm stoned black olives Preparation Melt butter in a pan, add onion and garlic and fry till translucent. Add Amira rice and mushrooms and cook for four minutes. Add salt and pepper and pour the chicken stock, add bay leaf and one lemon?s rind. When the stock starts boiling, cover the pan and cook till the water has evaporated and the rice is cooked. Set aside. In another pan, heat butter and fry the silvered almonds and raisins till the almonds are brown and raisins puffed. Set aside. Remove the bay leaf and lemon rind from the rice.
