Grilled Portobello Mushrooms Caps with Roasted Peppers & Onions
![]() I have been over-indulging; or at least I feel like it. I have been feeling like I am in a sugar coma for days thanks in part to baking over 150+ cookies. So my body is craving veggies and savory. When I woke up yesterday, I knew exactly what I wanted: portobello mushrooms with bell peppers and onions. This is one of my favorite veggies dished in the world. This dish is super easy to prepare: in a 425 degree oven, roast the peppers and onions for about 20-25 minutes. I cook them to the point that while cooked, they still retain some of the crisp bite. Ia a cast iron grilling pan, I place the mushroom caps that have been drizzle with olive oil. I grill them for about 15 minutes, just to bring out the flavors. The final touch is piling up the veggies on the caps and drizzling some aged balsamic vinegar, just to bring out the flavors. Mmmm....so good. This is always a crowd pleaser in my house, even for my meat eating fiance. As for me, there is never anything left on the plate when I am done. And this definitely was a great beginning to bringing me out of my sugar coma. :-) Buen Apetito! related searches : Grilled
