Homemade Instant Oatmeal Packets

Once upon a time... dinosaurs roamed the earth. There was a man that met a woman well a teenager actually. Anyway, this man realized wow she's so absolutely perfectly perfect I have to snatch her up ASAP! Cradles rocked, kids fall out etc. After many many years of bliss with my wondrous man meat, I thought I'd pretty much concluded that cereals, hot or cold were just not something I'd ever get him to eat. Its too blah, its too healthy or my personal favorite, the simple answer. "No, just No." 

He's bought probably one box of grape nuts the entire time we've been together, and for a little while there I had him eating this delish stuff kashi made. It was a fantabulous chocolate coconut granola ...unfortunately he loved it. because they discontinued it. Boo! Lately he's been getting the brown sugar oatmeal at the market and I noticed the cost was pretty remarkable. The $5 box of oatmeal wasn't really just the insane part but I noticed Stephen would sit down and eat half a box., yes thats right 4 packets, one meal. So I got to thinking why not just make this myself? I can use whatever ingredients I want and I can add a huge gob of brown sugar in there, right in the cute little love package this way chunk doesn't have to put it in himself. I know I know I'm pretty sweet like that. 


Its a great DIY pantry staple, might not be worth while to sack up 100 of these. (I make about 5 at a time, each bag with two packets worth) If your not really really into eating oatmeal all the time you could just make a few, but you really could make it one bowl at a time very easily. I have to wonder why buy the packaged stuff? After really looking into it I realized brown sugar oatmeal is pretty much just that...only they add artificial flavorings, the cream and fruit varieties can be made with powdered milk or dried coffee creamer and whatever quality and variety of dried fruit you want. So blueberries and cream, cranberry pecan or this basic brown sugar oatmeal is at your fingertips. It all starts with a $2 box of oats and you've got enough to make A LOT of oatmeal packets. The pecans add a natural maple like flavor thats shelf stable and heart healthy. No artificial ingredients here folks. Just Love in that bag. Your getting a great healthy belly warming start to any crazy day. 


Cinnamon & Brown Sugar Oatmeal Packets:


This is the recipe per baggy. Add each ingredient to each bag. This will make packages that are two standard packets from the grocery mart. You can halve the recipe however I feel it wastes too many baggies at that point. 

Start by making a rough chopped oat powder/ coarse flour. This is what makes the oatmeal thicker and like the things in the packages, or more like a traditional porridge. Take 3/4 cup oats and place it in a blender. Whiz until blended, it should be still somewhat coarse, not totally fine. This will give you enough for 5 bags. (two standard packets.)
Add to Each bag: 
1/2 cup rolled oats 
1/4 teaspoon salt
2 tablespoons oat powder 
2-4 tablespoons brown sugar (stephen loves the entire 1/4 cup its a lot more caramelly and rich)
2 tablespoons chopped toasted pecans or walnuts 
1/2 teaspoon cinnamon

Fruits and Cream:
1/2 cup rolled oats 
1/4 teaspoon salt 
2 tablespoons oat powder 
2 tablespoons brown sugar 
2 tablespoons vanilla powdered coffee creamer 
dried fruit: 2-3 tablespoons of 
peaches, pears, blueberries, or cranberries etc. 

-to prepare heat as usual. I sometimes use like 1 cup per packet. Some folks use milk we use water. Top with milk or cream maybe a smidge of butter? YES!  Stephen actually uses only 1 cup of boiling water over the oat meal, I found that doing this and then microwaving it one minute results in the absolutely perfect oatmeal.
