Ingredients:
I medium size chicken (cut into bite sizes, add 1 tbsp kunyit/saffron powder, salt to taste and deep fry)
To blend/ground:
1 inch ginger
4 shallots
1 serai/lemon grass
4 cloves garlic
1 large tomato
1 inch lengkuas/galangal
10 red chillies (or as your prefer)
7 birds eye chillies/chilly padi
Other ingredients:
10 lime leaves (tear into smaller pieces)
2 tbsp mae pranom thai chilly paste
1/2 cup coconut milk
8 tbsp oil
salt to taste

Preparation:
When oil is heated, fry the blended/grounded ingredients into a thick paste and the oil starts to float.
Pour in the coconut milk, add the chilly paste, lime leaves and salt to taste. Stir to blend all the ingredients together and continue to cook for another 4-5 mins.
Lastly, add the fried chicken pieces and blend all together. Keep stirring continuously for another 3-4 mins before removing from heat.
