Maryland Corn Crusted Scallops & Homemade Tartar Sauce
Ingredients: Tartar Sauce 1/2 cup Mayonnaise 2 tablespoon Sweet pickle finely chopped 1 tablespoon Capers chopped 2 teaspoon Fresh parsley chopped 1 teaspoon Dijon mustard 1 teaspoon Lemon Juice 1 dash Hot pepper sauce 1/8 teaspoon Salt to taste 1/8 teaspoon White pepper to taste Scallops 2 tablespoon Vegetable oil 3/4 cup Cornflake Crumbs 1/4 teaspoon Paprika 1/8 teaspoon Salt to taste 1/8 teaspoon Black pepper to taste 18 large Scallops 1/4 cup Mayonnaise 1 whole Lemon sliced for garnish Directions: Combine the sauce ingredients in a bowl. Cover and store in the fridge until needed. Line a baking sheet with parchment paper. Brush the parchment with the vegetable oil. Preheat the oven to 425?F. Place the cornflake crumbs, paprika, salt and pepper in medium bowl. Place the scallops and mayonnaise in a second bowl. Toss to thoroughly coat the scallops with mayonnaise. Coat a scallop in the cornflake crumb mixture, gently pressing the crumbs on to help them adhere. Set the coated scallop on the baking sheet; repeat with the remaining scallops. Bake the scallops for 5 minutes, then turn each one over and bake 5 minutes more.To serve, garnish with lemon slices, with tartar sauce alongside for dipping. related searches : Maryland
