Mechoui (Roasted Lamb Moroccan Style)
We made this when our whole family got together this summer. We were 25. When I say we I mean we hired someone to do this. This is probably bbq lamb style for the basque and you can usually hire a shepherd to make this for you. It is usually someone who raises their own sheep and has some lamb to sell. They either sell it directly to the butcher or they can come to you and make it for you. Mechoui is an Arabic word meaning “roasted on an open fire” as opposed to oven-roasted. It refers mostly to a whole lamb spit-roasted outdoors. In the Basque Country, they prepare it on top of braises on metal hooks. They are pre-rubbed (for more than 24 hours with secret ingredients). They are cooked for about 2 hours and then the cook just cuts it into different pieces for everyone to eat. They are generally served with white beans. related searches : Mechoui
