Tropical salad with baked tilapia

Ingredients

• Tilapia Fillet - 1
• Mixed Green Leaves - 1 Cup
• Mango Cubes - 1/4 cup
• Cashew Nuts - 1 tablespoon
• Dried Cranberry - 1 tablespoon
• Shredded Carrots - 1 tablespoon
• Cucumber Cubes - 1/4 cup
• Black Beans - 1 tablespoon
• Sweet Corn - 1 tablespoon
• Tomatoes ( cubed) - 1/4 cup
• Red Onion  - 1/4 medium

Homemade Salad Dressing:

• Take 1 tablespoon of Olive Oil in a bowl
• pinch of salt
• 1/2 teaspoon of black pepper
• 1/4 teaspoon of red pepper flakes
• 1 teaspoon of lime juice and
• 1/2 teaspoon of honey.
• whisk all the ingredients together well.

Preparation

• Baked Tilapia:
  Mix 1 teaspoon salt and 1/2 tsp pepper, 1/2 Paprika (Red Chili Powder) in 1 teaspoon Oil. Brush this on the Tilapia Fillet evenly and bake it at 350 F for 25 minutes. Once it is done take out the sprinkle 1 teaspoon of fresh lime juice.
• Take a Big salad bowl and add Mixed Green Leaves to it.
• Add Mango Cubes, Cucumber, Black Beans, Corn, Tomatoes Shredded Carrots and thinly sliced Red Onions.
• Add Cashew Nuts and Dried Cranberries. Toss all the ingredients very well.
• Pour the Salad Dressing on the Salad and toss them very gently.
• Serve the salad in the Plates and top with Baked Tilapia.
