Tilapia with lettuce salad

Ingredients

Number of serving: 3
1 onion cubed

1/2 cup chinese parsley chopped

1/2 cup of julienned bell pepper


1 carrot julienned

1 jalapeno chopped

2 tomatoes chopped

1/2 cucumber cubed

3 cups of chopped Romaine Lettuce

salt

1 lbs of tilapia

1/2 lemon

salt

pepper

1/4 cup chinese parsley

Preparation

  • Preheat oven to 350F.
  • Marinate fish with 1/2 lemon juice, salt and pepper and top it with chinese parsley.
  • Bake in oven for about 10 minutes - 15 minutes. To assemble, layer the chopped lettuce in a bowl.
  • Then layer with tomatoes, bell pepper, onions and carrot. Squeeze one lemon into the layer.
  • Top the layer with cucumber, then another 1/4 cup of the chinese parsley and jalapeno. Place the fish on top of the salad.
  • Squeeze the remaining lemon on top of the fish and top the fish with 1/4 cup of parsley.
